Cucumber Coconut Milk

What you'll need
  • 2-3 Cucumbers
  • 1 cup water (if you don't have a juicer)
  • 1 1/2 Cups Fresh Almond or Coconut Milk (preferably homemade)
  • Fresh Mint, or Aloe Vera Juice - optional

A few tips

  • Pour over your granola
  • Use in smoothies or juices
  • Use to make porridge or birchers or chia seed puddings
  • Drink straight; preferably chilled
  1. Start by making the cucumber juice. If you have a juicer, juice the cucumbers until you have 1 cup of juice (you can save the rest to add to soups, stews, smoothies or juices). If you don’t have a juicer, grate the cucumbers and blend them on a high speed in your blender.
  2. Once the cucumber has broken down completely, pour the juice through a sieve or a nut milk strainer, into a jug.
  3. Then blend 1 cup of this cucumber juice with your choice of almond or coconut milk. Add mint or aloe juice, to taste, if you want to increase the health benefits of this drink.
